Apple Spice Chia Seed Pudding
For all of you that want to soak in the season with pumpkin / spice / fall everything, here’s a healthy, clean, festive version of chia pudding. This apple spice chia seed pudding isn’t just a flavorful snack, the chia seeds make it a nutritious boost. While chia seeds have been a staple in Mayan and Aztec diets for centuries, they’ve only recently become mainstream in Western cultures. Chia seeds are packed with nutrients and antioxidants your body needs! Chia seeds are packed with omega-3 fatty acids, which raise your body’s good cholesterol and maintain healthy cell walls in your body. Chia seeds also give you antioxidants, calcium, fiber, iron, magnesium, and zinc. This is a great breakfast to grab as you run out the door, a mid-day snack, or a post-workout snack to have ready after you finish a workout or long run. Enjoy!
Gluten-Free, Dairy-Free, Soy-Free, Vegan, Vegetarian
Makes 1 Serving
- Whisk (optional)
- Bowl or jar with an air-tight lid
(Note: Use all organic, fresh ingredients if possible)
1 cup organic nut or rice milk
2 tbsp organic chia seeds
1 tsp cinnamon (organic and ceyon-based, if possible)
½ tsp vanilla (alcohol free)
1/4 tsp nutmeg powder
1 tsp Manuka honey (or any raw, unprocessed honey! Adding refined honey is just adding sugar.)
6 drops of alcohol-free liquid stevia
2 tbsp crushed nuts of choice. I like walnuts, pecans, or almonds with this recipe.
STEPS TO SOMETHING DELICIOUS
Pour milk into a bowl or jar with an air-tight container. Add chia seeds, cinnamon, vanilla, nutmeg powder, and optional sweetener (if adding). Whisk together or put on the lid and shake very well. Let sit one minute. Mix again. Then put on the lid and place in fridge. Store at least 2 hours, but overnight is best. Store up to five days before eating. When you are ready to eat the pudding, wash the apple and cut it up into bite-sized pieces. Place on top of the pudding and sprinkle with extra cinnamon or crushed nuts if desired. Enjoy the energizing, nutrient-dense boost!
