Sun-Protecting Watermelon Carrot Summer Salad

Pile together some summertime favorites in this fresh,  antioxidant-rich, sun-protecting summer salad! This nutrient-rich salad combines lycopene, found in the watermelon, together with other nutrients such as beta-carotene from carrots, vitamin C from the strawberries, vitamin E in the almonds, and antioxidants in the green tea. These powerful nutrients have been found to help protect skin from sun damage. Bonus: The salad is delicious! KITCHEN UTENSILS

WHOLESOME INGREDIENTS

(Note: Use all organic, fresh ingredients if possible)

SALAD

2 cups cut watermelon, or one half of a mini seedless watermelon. Bonus: You can use the watermelon shell as a bowl!

¾ cup shredded carrots

2-3 tbsp chopped almonds

DRESSING

Makes 2 servings

1 cups fresh strawberries (if using frozen strawberries, thaw them out)

1/2 cup brewed green tea

4 -6 large mint leaves (use more if the mint leaves are on the smaller side)

1 teaspoon raw honey (optional)

STEPS TO SOMETHING DELICIOUS
Brew the green tea according to instructions on the box. Set aside 1/2 cup for the dressing and enjoy the rest! Wash the strawberries and mint leaves with a vegetable wash and rinse in the strainer.  Place green tea, strawberries, mint, and optional honey (if adding) into a food processor. Blend until the dressing in a smooth consistency. Set aside.
Cut the watermelon into square-sized pieces. Mix the cut watermelon with the shredded carrots in a bowl or in the watermelon shell if using. Pour 1/2 cup of the dressing all over the watermelon and carrots. Sprinkle with chopped almonds and enjoy!

Note: You can store any extra salad dressing in an air-tight container in the refrigerator for 2-3 days. This is a great dressing to make ahead of time and use during the week.
